Christmas Ginger Cookies

I had bought Christmas cards for people at work but have not felt inspired to write them at all so I decided to bake cookies for them instead. That way I can be sure I don’t forget anyone!


200g Butter
100g Golden Syrup
100g Muscavado sugar

Melt together in a pan until it is completely mixed and all the sugar has dissolved. Leave to cool.

400g Plain Flour
2 tsp Baking Powder
3 tsp Ground Ginger
1 tsp Mixed Spice
1 tsp Cinnamon

Mix dry ingredients together and when the wet ingredients has cooled pour into bowl. Mix together and knead briefly. Put in fridge for 1 hour. Roll out and cut.

Preheat oven to 150 oC (My oven runs a little hot so I find this is best – it took me a few batches to perfect it!) bake for 8 mins then take out. Leave on tray for a couple of minutes to cool slightly and then place on a cooling rack to finish off.

Rolling out the dough – I do it between two sheets of cling film – less mess and no sticking! Then the fun part – cutting.

These have been cooked…now cooling away on my small cooling rack – I could do with a bigger one! I bought new cutters this week – yes that is a dinosaur!

It was great fun and it will be nice to give them all out tomorrow. I love baking for people!!

    yum, cookies! I do some kind of baking every year for friends and co-workers. This year I did apple dumplings.
